From Ocean to Nature - A Culinary Journey Through Madeira

On 14 November 2025, Restaurante Oxalis at Casa Velha do Palheiro, Relais & Châteaux, welcomes Chef José Diogo Costa (One Michelin Star, Reid’s Palace, A Belmond Hotel) for an exclusive four-hands dinner with Chef Gonçalo Bota (Michelin Guide-recommended, Oxalis Restaurant).

Together, they present “From Ocean to Nature” — a culinary journey through Madeira, celebrating the island’s vibrant landscapes, traditions, and producers through six refined creations: four savoury dishes, a pre-dessert, and a dessert, harmonised with a Premium Champagne selection curated for the occasion.

This special evening brings together two of Madeira’s most iconic houses — Relais & Châteaux and Belmond — in a tribute to heritage, creativity, and the island’s natural abundance.

Arraial Gourmet on the lawn of Hotel Casa Velha do Palheiro, Relais & Châteaux, bringing together Tradition, Innovation, Sustainability, and Nature –

One year after opening its doors, the Oxalis restaurant celebrates its first anniversary with the 1st edition of the Arraial Gourmet, a unique event that combines contemporary gastronomy, Madeiran tradition, and nature, in a memorable setting: the lawn of Hotel Casa Velha do Palheiro, Relais & Châteaux, on September 12, at 7:00 p.m.

The event will feature Live Cooking, where six renowned chefs of contemporary cuisine will create and serve dishes inspired by regional traditions — reinterpreted in gourmet style. Each station will pay homage to the essence of the arraial, with its own identity and elevated creativity.

Six chefs, six visions, one garden:

A Series of Gastronomic Events 4 Nights, 7 Renowned Chefs

Get ready for an unforgettable culinary journey!

“Flavours & Memories” presents four extraordinary nights, featuring seven renowned chefs who will create unique dining experiences. Each dinner will be a fusion of authentic flavours, creativity, and unforgettable memories.

We kick off this special series on April 12th with the talented Chef Benoît Sinthon, who promises a delightful evening filled with sophisticated and flavorful dishes.

Chef Benoît Sinthon was born in France, in Gardanne, near Marseille. From a young age, he was exposed to markets and fresh produce, sparking his passion for cooking. After training at the Glion Institute in Switzerland, he worked at renowned restaurants like Lani Cuisiniers in Aix-en-Provence and Les Trois Forts in Marseille. In 1994, he moved to Madeira, to work at Reid’s Palace and Casa Velha do Palheiro. In 2004, he became the executive chef at Il Gallo d'Oro, the restaurant at The Cliff Bay hotel in Funchal. Under his leadership, the restaurant earned two Michelin stars and a Michelin Green Star for sustainability, highlighting his dedication to local ingredients and responsible culinary practices.

This themed dinner will showcase a combination of modern dishes currently featured at Oxalis and classic recipes from Chef Benoît’s time at Casa Velha do Palheiro in the early 2000s. The idea behind this event is to bring a sense of nostalgia from Chef Benoît’s memorable years while also highlighting the current innovations and techniques we are using at Oxalis today.
