On Saturday, June 8th, join us at Oxalis Restaurant to celebrate World Oceans Day with a special, sustainable culinary experience. Chef Gonçalo Bota has created a thoughtfully crafted menu inspired by the ocean, featuring responsibly sourced ingredients and local treasures.

Relais & Châteaux is raising awareness, in collaboration with Ethic Ocean, about the importance of investigating seafood sourcing to ensure sustainable practices. Each dish reflects a commitment to preserving marine biodiversity and showcases the rich flavours of Madeira.

Oxalis: Flavours & Memories

A Series of Gastronomic Events 4 Nights, 7 Renowned Chefs

Get ready for an unforgettable culinary journey!

“Flavours & Memories” presents four extraordinary nights, featuring seven renowned chefs who will create unique dining experiences. Each dinner will be a fusion of authentic flavours, creativity, and unforgettable memories.

We kick off this special series on April 12th with the talented Chef Benoît Sinthon, who promises a delightful evening filled with sophisticated and flavorful dishes.

Chef Benoît Sinthon was born in France, in Gardanne, near Marseille. From a young age, he was exposed to markets and fresh produce, sparking his passion for cooking. After training at the Glion Institute in Switzerland, he worked at renowned restaurants like Lani Cuisiniers in Aix-en-Provence and Les Trois Forts in Marseille. In 1994, he moved to Madeira, to work at Reid’s Palace and Casa Velha do Palheiro. In 2004, he became the executive chef at Il Gallo d'Oro, the restaurant at The Cliff Bay hotel in Funchal. Under his leadership, the restaurant earned two Michelin stars and a Michelin Green Star for sustainability, highlighting his dedication to local ingredients and responsible culinary practices.

This themed dinner will showcase a combination of modern dishes currently featured at Oxalis and classic recipes from Chef Benoît’s time at Casa Velha do Palheiro in the early 2000s. The idea behind this event is to bring a sense of nostalgia from Chef Benoît’s memorable years while also highlighting the current innovations and techniques we are using at Oxalis today.
